Summer Melon Salad

There’s nothing better on a warm summer day than a cool, refreshing melon salad. 

*This salad is wonderful by itself, but also goes great served on a bed of baby arugula or spinach.

Ingredients

2 cups watermelon, diced into 1" cubes
2 cups cantaloupe, diced into 1" cubes
2 T. chopped fresh mint
2 T. chopped fresh tarragon
Juice of 1 lime
1 T. olive oil
1-2 tsp. raw honey or agave nectar
1/8 tsp. sea salt

Directions

1. In a small bowl, whisk together lime juice, olive oil, honey, and sea salt.
2. Pour over melon and chopped herbs, and lightly toss.
3. Serve chilled.
Whole-food meal with leafy greens, beans, grains, berries, avocado, seeds, and vegetables being prepared in a sunlit kitchen.
