This vegan recipe comes from Phyllis, who writes: "Reading the recipe in Health Tip #284, I was thinking about vegan meals with common ingredients. It reminded me of a similar recipe that I have put together. It makes a delicious and refreshing sandwich full of raw vegetable benefits:"
Spread a couple tablespoons of hummus on a sprouted wheat tortilla. Layer thin slices of cucumber, onion, avocado, tomato, and grated carrot. Top with lettuce and roll up. You could also add sliced almonds and grated zucchini as well." ENJOY!
