While eating raw vegan, you may be wondering what healthy raw vegan snacks there are out there. This one is very nutritious and will give you energy! Introducing Raw Energy Balls - a simple, yet delicious treat that fits flawlessly into the perfect raw vegan diet plan.
1 cup raw walnuts or pecans
1 cup sprouted wheat berries (To sprout, soak 3/4 cup wheat berries in distilled water 24-hours)
1 cup raisins
4 tablespoons shredded coconut
2 tablespoons apple juice or water
Put nuts in food processor and pulse a few seconds. Add drained wheat berries, raisins, and coconut. Process until a dough is formed, adding additional apple juice or water if necessary. If you desire a sweeter product, add extra raisins or dates. Refrigerate. When cold, roll spoonfuls into balls with your fingers and then roll in additional coconut. Refrigerate. ENJOY!
