Allison Barberi sent in the following recipe in response to my request for children's testimonies and recipes for our upcoming book, Hallelujah Kids. Allison's Raw "Chocolate" Cake is made with some of the best vegan ingredients, like Tahini, a raw vegan protein source with many other health benefits, and Carob Powder, a healthy alternative to chocolate. Let's dive in and discover the "chocolatey" magic of Allison's Raw "Chocolate" Cake!
CRUST 5 cups raw Almonds (ground)
Ingredients:
3 cups organic Raisins
3 tablespoons raw Carob powder
1/2 teaspoon Celtic Sea salt (or to taste)
Directions:
Grind all the above ingredients well in a food processor and then press into a pie plate, and set aside.
TOPPING
Ingredients:
1/2 cup distilled water
1 cup Tahini
6 tablespoons raw Honey
3 tablespoons raw Carob powder
1 teaspoon Vanilla
Directions:
Blend all topping ingredients in food processor and spread evenly over crust. Decorate with fruits, berries, and nuts. Chill! ENJOY! (If you have any topping left over, roll bananas in the topping, then roll in chopped pecans and freeze for a yummy treat.)
