
Dessert is part of the plan. Leaving it out is how people end up eating something they did not choose at nine at night.
Make a pan on Sunday and there is something waiting all week. Fifteen minutes of work, no oven, and the chilling does the rest.
Ingredients
The base
- 1 1/2 cups natural cashew butter
- 1/4 cup pure maple syrup
- 1/4 cup coconut oil, melted
- 1 tsp vanilla extract
- 1/4 tsp unprocessed salt (Himalayan, Celtic or Real Salt)
- 1 cup almond flour
- 1/2 cup oat flour
The top
- 8 oz dairy-free dark chocolate, chopped
- 1 tsp coconut oil
- Flaky sea salt, to finish
Method
- Line an 8-inch square pan with parchment, leaving an overhang on two sides so you can lift the slab out later.
- Stir the cashew butter, maple syrup, melted coconut oil, vanilla and salt together until completely smooth.
- Add the almond flour and oat flour and mix until it comes together as a thick dough.
- Press it into the pan firmly and level it carefully. Use the bottom of a glass. An uneven base is what makes bars crack when you cut them.
- Freeze fifteen minutes while you melt the chocolate with the teaspoon of coconut oil, gently, stirring until glossy.
- Pour the chocolate over the chilled base and tilt the pan to spread it to the corners. Scatter flaky salt over the top.
- Refrigerate two hours, until firm.
- Lift the slab out by the parchment and cut into sixteen squares.
Notes
- Cut with a warm knife. Run it under hot water, dry it, cut, and wipe between cuts. Cold chocolate shatters under a cold blade.
- Let the pan sit out five minutes before cutting if it has been in the refrigerator overnight.
- Natural cashew butter separates in the jar. Stir the oil back in before measuring, or the base will be dry.
- Oat flour is rolled oats blitzed in a blender until fine. There is no reason to buy it.
- They keep two weeks in a sealed container in the refrigerator, or three months in the freezer.
- This is a rich food. Cashew butter, maple syrup and chocolate all in one square. Make it for a Saturday evening rather than a Tuesday, and it does the job it is here to do — nobody in the house feels shut out.
- Use unprocessed salt — Himalayan, Celtic sea salt or Real Salt. Standard table salt and most standard sea salt have been refined, and that processing matters more than the trace minerals people usually talk about.
