
The evening meal is the one that decides whether a person keeps eating this way. If dinner feels like less than what they had before, they stop.
This is a real dinner. Mushrooms browned until they are deeply savory, a sauce made silky with oat milk instead of sour cream, wide noodles underneath. One step matters more than the rest, and it is in the method below.
Ingredients
The stroganoff
- 16 oz cremini mushrooms, sliced
- 1 yellow onion, diced
- 4 cloves garlic, minced
- 2 Tbsp olive oil
- 2 Tbsp whole wheat flour (or 1 Tbsp arrowroot)
- 1 1/2 cups vegetable broth
- 1 cup unsweetened plain oat milk
- 2 Tbsp Dijon mustard
- 1 Tbsp tamari
- 1 tsp dried thyme (or 1 Tbsp fresh)
- Unprocessed salt (Himalayan, Celtic or Real Salt) and black pepper, to taste
To serve
- 12 oz egg-free fettuccine or pappardelle
- Fresh parsley, chopped
Method
- Put the pasta water on to boil and cook the noodles while you make the sauce. Drain them a minute early — they finish in the pan.
- Heat the olive oil in a wide skillet over medium. Cook the onion until soft and translucent, about five minutes.
- Add the mushrooms in a single layer and leave them alone. Let them brown before you stir. They will release their liquid, and you want that liquid to cook away entirely — eight to ten minutes. This is the step that makes the dish; rushing it gives you gray mushrooms and a thin sauce.
- Add the garlic and cook one minute more.
- Sprinkle the flour over and stir for a minute so it loses its raw taste.
- Pour in the broth, scraping the bottom of the pan. Add the oat milk, Dijon, tamari and thyme.
- Simmer eight to ten minutes, stirring now and then, until the sauce coats the back of a spoon. Taste and season.
- Add the drained noodles and toss until coated. Finish with parsley.
Notes
- Use a wide pan. Crowded mushrooms steam instead of browning, and a steamed mushroom never gets that savory depth back. If your pan is small, brown them in two batches.
- The oat milk must be plain and unsweetened. Vanilla or sweetened will be obvious in the sauce.
- The Dijon is what makes this read as stroganoff rather than mushroom pasta. Don’t reduce it.
- Cremini give a better flavor than white button mushrooms. A handful of dried porcini, soaked and chopped, goes further still — add the soaking liquid in place of some of the broth.
- It reheats well. Add a splash of broth in the pan, since the noodles drink the sauce overnight.
- Use unprocessed salt — Himalayan, Celtic sea salt or Real Salt. Standard table salt and most standard sea salt have been refined, and that processing matters more than the trace minerals people usually talk about.
