Whole Grain Pasta Salad

Crock Pot Vegetables & Rice Reading Whole Grain Pasta Salad 1 minute Next Couscous and Salad

This versatile pasta salad can be served on its own or over a bed of salad greens, and can be garnished with minced parsley, chives, or finely grated carrots.

Ingredients

  • 12 oz. whole-grain shells or spiral pasta
  • Your choice of vegetables, such as:
  • Sweet red onion
  • Carrots
  • Celery
  • Red bell pepper
  • Cucumbers
  • Summer squash
  • Cherry or chopped tomatoes
  • Your favorite salad dressing or pesto sauce
  • Chopped herbs such as parsley or chives

Method

  1. Cook pasta according to package directions.
  2. Remove from heat and drain immediately, and rinse with cold water. Place in colander and set aside to drain while you prepare your vegetables.
  3. Finely chop or grate your favorite veggies.
  4. Top with your favorite dressing or pesto sauce and toss gently. Other seasonings may be added if desired.
  5. This pasta salad can be served either alone, or on a bed of salad greens. Can be garnished with minced parsley, chives, or finely grated carrots.
