Last week in this column, we shared how couscous and vegetables can be mixed together for a nice, quick, and unique way to present your family with a vegetable salad. This week, let's make a similar salad, only using whole grain pasta instead of couscous.

Ingredients:

12 Ounces of Whole Grain Shells or Spiral Pasta

Chopped or Grated Vegetables (sweet red onion, carrot, celery, red bell pepper, cucumber, summer squash, cherry or chopped tomatoes, etc.)

Dressing or Pesto Sauce 

All Purpose or Italian Seasoning (optional)

Directions:

Add 12 ounces of whole grain shells or spiral pasta to boiling water and simmer for 5-10 minutes. Remove from heat and drain immediately, rinsing with cold water. Place in colander and set aside to drain.

While the pasta is draining, finely chop or grate your favorite veggies. Some of the vegetables we use are: sweet red onion, carrot, celery, red bell pepper, cucumber, summer squash, cherry or chopped tomatoes, etc.

Top with your favorite dressing or pesto sauce and toss gently. Other seasonings may be added if desired. Sometimes we use all-purpose or Italian seasoning. This pasta salad can be served either alone, or on a bed of salad greens. Can be garnished with minced parsley, chives, or finely grated carrots. ENJOY!
