This versatile pasta salad can be served on its own or over a bed of salad greens, and can be garnished with minced parsley, chives, or finely grated carrots.
Ingredients:
12 oz. whole-grain shells or spiral pasta
Your choice of vegetables, such as:
Sweet red onion
Carrots
Celery
Red bell pepper
Cucumbers
Summer squash
Cherry or chopped tomatoes
Your favorite salad dressing or pesto sauce
Chopped herbs such as parsley or chives
Directions:
- Cook pasta according to package directions.
- Remove from heat and drain immediately, and rinse with cold water. Place in colander and set aside to drain while you prepare your vegetables.
- Finely chop or grate your favorite veggies.
- Top with your favorite dressing or pesto sauce and toss gently. Other seasonings may be added if desired.
