Minted Napa Cabbage

Fresh herbs are the key to this delicious cabbage dish. Whenever in a conundrum, deciding how to elevate the flavor in raw salads and slaws, consider fresh basil and mint as your answer. This recipe is from Healthy 4 Him, by Julie Wandling.

Ingredients

1 head Napa Cabbage "“ cut into thin strips
2 carrots - shredded
12 fresh basil leaves - shredded
12 fresh mint leaves - shredded
2 Tbsp. cilantro
2 Tbsp. lime juice
1 ½ Tbsp. shoyu (optional)
1 tsp. red pepper flakes
1 Tbsp. maple syrup
¼ cup cashews

Directions

1. Mix all ingredients together in large bowl
2. Marinate 1 hour.
Whole-food meal with leafy greens, beans, grains, berries, avocado, seeds, and vegetables being prepared in a sunlit kitchen.
