Ingredients

  • 1 onion, chopped
  • 2 Tbsp olive oil or grapeseed oil
  • 4 cups water
  • 3 Tbsp lemon juice
  • 1/2 tsp unrefined sea salt
  • 1/4 tsp black pepper
  • 1/4 tsp garlic (optional)
  • 1 cup brown lentils
  • 1/2 cup whole grain brown rice (short grain, long grain, basmati or whatever you choose)
  • 1/2 tsp fennel seeds (optional)
  • 1 tsp all purpose seasoning (Frontier brand)

Method

  1. Sauté onion in oil for 5 minutes.
  2. Add remainder of ingredients to the pot. Stir all together well.
  3. Bring to a boil. Turn down and simmer for 30 minutes with the lid on.

Makes 4-1/2 cups. If you do not have "all purpose seasoning," use a little basil and thyme.
