Corn Tomato Relish

Relishes are one of those versatile kitchen companions that can instantly elevate any plant-based dish.

Relishes can be used in a variety of ways. They can be placed on top of grains, potatoes, salads, soups, and beans. This relish is sweet because of the fresh corn kernels. The fresh mint and fresh cilantro make a splendid herb combination.

Ingredients

12 cherry tomatoes
¼ cup red onion, diced
1 ear fresh corn, kernels removed
1 Tbsp. fresh mint, cut into strips (chiffonade)
½ cup fresh cilantro, minced

Directions

Mix all ingredients together and allow to marinate for several hours for flavors to marry.
Whole-food meal with leafy greens, beans, grains, berries, avocado, seeds, and vegetables being prepared in a sunlit kitchen.
