Dill Sour Cream made from blended cashews, lemon and fresh dill

Dill Sour Cream

Looking for a terrific snack or appetizer? May we suggest dolloping some dill cashew sour cream on top of sliced radishes? Radishes never tasted this good! Using the dill sour cream as a dip for celery, romaine lettuce leaves, broccoli or your favorite veggie is another delicious option. Possibilities abound with flavor-rich vegan sour creams.

Ingredients

1 cup cashews
½ cup water
2 ½ Tbsp. lemon juice or amount for desired tanginess
¼ tsp. unrefined salt, plus another 1/8 tsp. unrefined salt, or amount to taste
Around ½ cup fresh dill leaves, or more to taste (mainly the frilly part with thin tender stems, not the thick stems)

Directions

Blend all ingredients in a high powered blender until creamy.
Whole-food meal with leafy greens, beans, grains, berries, avocado, seeds, and vegetables being prepared in a sunlit kitchen.
