These wholesome gluten-free cookies bring together oats, brown rice flour, and warm baking spices like cinnamon, ginger, and allspice, sweetened naturally with maple syrup and applesauce. A soaked ground flax mixture stands in for eggs, binding everything together into a soft, satisfying cookie with just the right amount of sweetness — perfect for eliminating cookie cravings without the guilt of junk food.

Ingredients

  • 3/4 cup oats
  • 3/4 cup brown rice flour
  • 1/4 tsp unrefined sea salt
  • 1/4 tsp allspice
  • 1/4 tsp ginger
  • 1/2 tsp cinnamon
  • 1/4 cup grapeseed oil (for medium/high heat) or extra virgin coconut oil, melted
  • 1/3 cup maple syrup
  • 1/2 cup raisins (optional)
  • 3 Tbsp ground flax seeds (1-1/2 Tbsp whole flax seeds makes 3 Tbsp ground)
  • 3 Tbsp applesauce

Method

  1. Mix the oats, brown rice flour, sea salt, allspice, ginger, cinnamon, oil, maple syrup, and raisins together in a bowl and let sit for 10 minutes.
  2. In a separate bowl, mix the ground flax seeds and applesauce together well and let sit for 5 minutes.
  3. Add the ground flax mixture to the oat/flour mixture and integrate well; this mixture holds everything together.
  4. Roll into balls about the size of a golf ball. Mash down to form a cookie shape and place on an ungreased cookie sheet.
  5. Bake at 350 degrees for 20 minutes. Let cool on a rack.

Makes 11 cookies (double the recipe for more). Keep them handy in a container on your kitchen counter or in your freezer.
