These no-bake carob truffles are a festive, better-for-you treat made from dates, almonds, and sesame seeds blended into a rich, chocolate-like base with carob powder and cinnamon. Rolled into balls and coated in shredded coconut for a "snowball" finish, they're every bit as satisfying as candy, though you could just as easily call them breakfast.
Ingredients
- 1 apple, cored, finely chopped and set aside
- 5 dates, soaked for 15 minutes
- 6 Tbsp sesame seeds
- 1/3 cup almonds
- 1 Tbsp coconut oil, melted
- 1/3 cup raisins
- 6 Tbsp carob powder
- 1/2 tsp cinnamon
- 1 cup ground flax
- 2/3 cup unsweetened shredded coconut, to roll balls in
Method
- Grind the sesame seeds in a food processor until a fine meal.
- Add the almonds and process until a very fine meal.
- Add the coconut oil and process again.
- Add the dates, cinnamon, raisins, carob, and apple. Process until creamy.
- Empty the contents into a bowl. Add the ground flax and combine well. Let sit for 12 minutes.
- Roll into balls about the size of a golf ball.
- Roll in the shredded coconut. Store in the freezer.
Makes 17 balls. You can call these cookies, candy... or breakfast!
