Any Day Fruit Salad

This isn't your average fruit salad. Grapefruit, orange, apple, and pear get tossed with a warmly spiced orange dressing — even a bit of orange peel — for a fruit salad with real personality. Great for breakfast, lunch, or dessert.

Ingredients

  • 3 stalks celery, minced
  • 1 grapefruit, cut in bite-sized chunks
  • 1 orange, cut in bite-sized chunks (keep half of the peeling)
  • 1 apple, chopped
  • 2 pears, chopped
  • 1/2 peeling of an orange, cut in small pieces
  • 1/4 tsp ginger, fresh or powdered
  • 1/4 tsp allspice
  • 1/2 tsp cinnamon
  • 3 Tbsp honey
  • 1/3 cup orange juice

Method

  1. Process the orange peeling, ginger, allspice, cinnamon, honey, and orange juice until the orange peel is in tiny bits.
  2. Pour dressing over the salad and mix well.

Makes 7 cups. The spices, celery and orange peel really liven up this salad! If you are in a hurry for breakfast, lunch, or even dinner, heap up a luscious bowlful. For a sweeter dish or dessert, leave out the celery. For a more sour zip, add another grapefruit.
