Tropical Berry Smoothie Bowl

Frozen berries, banana and mango blended thick enough to eat with a spoon. Five minutes, no cooking, and the amount of milk is the whole trick.

Breakfast is the meal most people give up on first, usually because the version they picture takes time they don’t have. This one takes five minutes and no cooking.

The difference between a smoothie bowl and a smoothie is the amount of liquid. Half a cup is enough to get the blender moving and no more. Add another splash and you have a drink.

Ingredients

The base

  • 1 1/2 cups frozen mixed berries
  • 1 frozen banana, sliced
  • 1/2 cup frozen mango chunks
  • 1/2 cup unsweetened almond milk

To top

  • Fresh strawberries, sliced
  • Fresh blueberries
  • Fresh banana, sliced
  • Granola
  • Unsweetened coconut flakes

Method

  1. Put the frozen berries, banana and mango in the blender, then pour the almond milk over the top.
  2. Blend on low and work the tamper down into the fruit. It will look like it isn’t going to come together. Keep going.
  3. Stop when it looks like soft-serve — thick enough that it holds the mark of the spoon. If the blender is genuinely stuck, add milk one tablespoon at a time, not more.
  4. Spoon into two bowls and smooth the tops.
  5. Top with the fresh fruit, granola and coconut, and eat it right away.

Notes

  • Freeze the bananas ripe — spotted, not yellow. Peel and slice them before they go in the freezer. That is where the sweetness comes from, and it is why this needs no added sweetener.
  • A tamper is the difference between four minutes and a fight. If your blender doesn’t have one, stop and scrape down the sides two or three times instead.
  • This doesn’t keep. It melts as it stands and separates in the refrigerator. Make it the moment you want it.
  • Read the granola label. Most of what is sold as granola is held together with oil and sugar. If yours is, a handful of raw nuts and seeds does the same job.
  • For a thicker bowl, freeze the almond milk in an ice cube tray and use four or five cubes in place of the half cup.
