Sweet kiwi and peppery baby spinach are a surprisingly perfect match, topped with purple onion and a raspberry-balsamic dressing. A sprinkle of hemp seeds adds a protein boost and a pleasant crunch.
Ingredients
- 5 oz spinach
- 6 kiwi, chopped
- 12 rings purple onion
- 4 Tbsp hemp seeds (optional)
- 3 Tbsp extra virgin olive oil or flax oil
- 2-1/2 Tbsp raspberry balsamic vinegar (use plain balsamic if you can't find raspberry)
- 1 small clove garlic
- 3/4 tsp maple syrup
- 1/4 tsp unrefined sea salt
Method
- Blend dressing ingredients together.
- Divide spinach, kiwi, and onion into 4 bowls.
- Drizzle 2 tsp to 1 Tbsp dressing over each salad.
- Garnish with hemp seeds.
