Spicy Red Pepper Soup

In her recipe book, “Rhonda’s Culinary Creations”, there are around 50 raw soup recipes! That is quite a repertoire! For those wanting a change from a salad or wanting to pamper their gut by blending their food, raw soups are ideal. Add some spice to your life with this *Spicy Red Pepper Soup by Rhonda.

Ingredients

1 cup distilled water
1 large, red bell pepper, seeded and quartered
1 Roma tomato, quartered
¼ small, sweet onion (or to taste)
1 to 2 garlic cloves, peeled
1 Tbsp. organic, extra virgin olive oil
¼ cup fresh cilantro
Juice from ½ lime, freshly extracted
¼ tsp ground cumin seeds
1 tsp. unrefined sea salt (optional)
Pinch of cayenne pepper (optional)
½ avocado, peeled. pitted and diced for garnish

Directions

Place all ingredients (except avocado) in VitaMix or other powerful blender and process until smooth. Taste, adjust seasonings if needed. Chill in the refrigerator until serving time and top with diced avocado for garnish.
