Rhonda's Raw Carrot Soup

A few evenings ago, Rhonda, after our large evening salad, served me one of the tastiest soups I have ever had the pleasure of eating. It is one of my new favorite raw food recipes. It is simple to prepare and I thought very delicious. I preferred it at room temperature, but it could be WARMED (not cooked, remember this is a healthy uncooked meal) before serving:

Ingredients

6 large Carrots

1/4 cup raw Sweet Onion

1 1/2 cups raw Almonds (soaked overnight and drained)

1 large rib of Celery

1/2 Red Bell Pepper

1/4 teaspoon Paprika

1/2 teaspoon Thyme

Celtic Sea Salt to taste if desired

3 cups Distilled Water

Directions

Combine all ingredients in a blender and process until creamy. Serve immediately. Can be garnished with fresh or dehydrated chives. ENJOY!
