Rhonda, at her Culinary Academy class this past Friday evening (2006-2-3) prepared and served the following recipe in recognition of Valentine's Day:
Ingredients
1 Heart Shaped Cake Pan (use regular bunt pan if Heart Shape not available)
32 ounces frozen Raspberries OR frozen Strawberries
2 cups Almonds (slivered)
10-12 ripe Bananas (peeled)
Directions
Puree bananas in Blender or Food Processor using S blade. Swirl raspberries (or strawberries) into the pureed bananas. Place half of the almonds in bottom of cake pan and top with banana/raspberry mix. Top with remaining slivered almonds, cover with plastic wrap and freeze overnight. To serve, remove cake from freezer, turn upside down and run hot water over pan until cake releases. Cut and serve immediately, storing any leftovers in freezer. ENJOY!
Rhonda drizzled over this frozen Sweetheart Cake, chocolate syrup she had made using carob. Most of those who tasted it thought it the real thing.
