3 ripe avocados, peeled, deseeded, diced

1 medium onion

1/4 cup freshly juiced whole organic lemon

1/4 cup fresh parsley

1 1/2 tsp. cumin

2 cloves garlic

2 ripe romano tomatoes

2 jalapenos, or 1/4 tsp. red cayenne powder

1 1/2 tsp. sea salt Romaine or leaf lettuces flour tortillas, optional


Please wash all ingredients. Pour lemon juice over diced avocados, set aside in large bowl. In food processor, place onion, parsley, cumin, garlic, jalapenos/cayenne, and salt. Process these to fine chopped. Add tomatoes and pulse to chop into already processed mixture. Place mixture into bowl with avocados and gently fold together. Put filling in center of lettuce leaves, wrap them up and serve. You may want to use flour tortills to wrap around lettuce. Your choice. Enjoy!
