This is a soothing, refreshing soup that is perfect for a vegan family dinner, since it is easy to eat and digest. In the summer, a garnish of fresh mint might taste good also." Ingredients:
2-3 large organic apples
1 stalk of celery
1-1 1/2 cups distilled water (or organic apple juice)
A handful of organic raisins
1/4 teaspoon cinnamon
Directions:
Cut up apples and celery, and blend until smooth in a blender, adding water or juice as needed to make a puree. Pour into individual serving bowls. Top with raisins and sprinkle with cinnamon. ENJOY!
