In the meantime, the business of healthy vegan eating goes on! Here is a simple fruit soup that I just made and thought I'd pass along. This is a soothing, refreshing soup that is perfect for a vegan family dinner, since it is easy to eat and digest. In the summer, a garnish of fresh mint might taste good also." Let's learn how to make one of Mary's favorite raw meal recipes:
Ingredients
- 2-3 large organic apples
- 1 stalk of celery
- 1-1 1/2 cups distilled water (or organic apple juice)
- A handful of organic raisins
- 1/4 teaspoon cinnamon
Method
- Cut up apples and celery, and blend until smooth in a blender, adding water or juice as needed to make a puree. Pour into individual serving bowls. Top with raisins and sprinkle with cinnamon. ENJOY!
