This recipe is from "Healthy 4 Him" by Julie Wandling. The dressing on this remarkable delicious combo is a breeze. Simply soak a pitted medjool date in about 1/2 cup water overnight. Blend the date and water with a blender, and pour over vegetables. Garnishing with seeds or nuts adds a little fat and texture if you like.

Ingredients

1 lb. turnips-peeled and cubed
3 carrots- cut in circles
2 Tbsp. maple syrup or 1 date blended with water

Directions

1. Mix all and marinate 2 hours
