This sweet, raw recipe comes from Mar Jo Herron, RN, who lives in Florida: "Dear George, I so enjoy the weekly recipes for vegans. Hope there are some who will enjoy this one. Following is my vegan summer recipe for a cold soup."
Ingredients:
3 cups Mango, diced
2 tablespoons Lime juice
1 1/2 cups Orange juice
1 cup Banana, diced
1 1/2 cups Papaya, diced
1 cup Pineapple, diced
3 tablespoons Coconut, shredded
mint leaves or nutmeg
Directions:
In blender, blend mango & lime juice. Add orange juice to desired consistency (should be a pourable sauce). Strain through strainer to remove pulp. Stir in papaya, pineapple, banana. Sprinkle with coconut. Garnish with mint or nutmeg.
