This Living Lasagna is one of the most scrumptious recipes! It may take a little extra time to prepare, but IT IS WELL WORTH IT. The Red Pepper Cheese is one of the reasons this lasagna is so outrageous. This "cheese" would be superb atop a salad, or a dollop of it on raw veggies! Two different toppings are provided. Choose either the Raw Tomato Sauce or Tomato Dressing.
Ingredients
4 medium turnips (no need to peel)
6 Roma, or small to medium tomatoes, cut into ¼" slices
5 oz. spinach
5 oz. arugula
2 Tbsp. extra virgin olive oil
¼ tsp. unrefined sea salt
Red Pepper Cheese Ingredients
½ cup macadamia nuts
½ cup cashews
2 Tbsp. lemon juice, or to taste
¼ tsp. unrefined salt, or to taste
6 Tbsp. water
½ fresh or roasted pepper
¼ tsp. dried oregano
Raw Tomato Sauce Ingredients
2 Roma tomatoes
1 tsp. extra virgin olive oil
1/8 tsp. unrefined salt
3 sundried tomatoes (soaked for one hour in water, drained, water reserved)
1 tsp agave nectar (optional)
½ tsp lemon juice
1 Tbsp. water from sundried tomatoes
¼ tsp. dried oregano
(Optional) Tomato Dressing Ingredients
2 medium tomatoes
½ red bell pepper
5 tsp. lemon juice
1 Tbsp. extra virgin olive oil
Directions
1. Cut turnips into paper thin slices (a mandolin works best). Set aside.
2. Place 5 oz. of arugula and 5 oz. of spinach in separate bowls. In each bowl, pour 1 Tbsp. of extra virgin olive oil and 1/8 tsp salt. (Add additional extra virgin olive oil to your liking.)
3. Massage oil and salt into the greens for several seconds.
Making Red Pepper Cheese:
1. Process all the following ingredients in a food processor until creamy:
½ cup macadamia nuts
½ cup cashews
Making Raw Tomato Sauce:
1. Blend all Sauce ingredient
1 tsp. extra virgin olive oil
1/8 tsp. unrefined salt
3 sundried tomatoes (soaked for one hour in water, drained, water reserved)
1 tsp agave nectar (optional)
½ tsp lemon juice
1 Tbsp. water from sundried tomatoes
¼ tsp. dried oregano
How to Assemble Lasagna:
1. Place 1 -1.5 oz of spinach on a plate.
2. On top of spinach, place 5 or 6 turnip "˜lasagna" slices.
3. Place 3 spoonfuls (approximately ½ Tbsp. each) of cheese mixture on lasagna
4. Place 4 slices of tomatoes on top of cheese mixture
5. Place 1 oz. of arugula on top of Roma tomatoes.
6. Repeat last 3 steps
7. Garnish with a tall, thin stack of arugula and top with tomato sauce or dressing.
(Optional) Tomato Dressing (Dressing provides an alternative to sauce.)
