This soup base is incredibly creamy. The “Fold-In Ingredients” can be changed to whatever you have on hand or prefer. You may want radishes and celery instead of bell peppers and corn, etc. Creativity keeps your raw cuisine exciting. This recipe is by Rhonda Malkmus.
Ingredients
Soup Base Ingredients
3 large avocadoes, peeled and pitted
2 medium cucumbers, peeled and cut into 2-inch pieces
2 medium tomatoes, quartered (Can use equivalent volume of cherry tomatoes)
1 Tbsp. fresh cilantro
2 Tbsp. Meyer lemon juice, freshly extracted
Distilled water to reach desired consistency (around 2 cups)
Fold-In Ingredients
1 cup zucchini, diced
½ cup carrots, shredded
½ cup red, orange or yellow bell pepper, diced
½ cup fresh or frozen corn kernels
¼ cup red or green onions, diced

2. Remove and pour into bowl
3. Add fold-in ingredients and serve immediately
*Option:* For a warm soup, heat distilled water, but not to boiling, before adding to soup
