1 onion, chopped
4 cloves garlic, minced
3 stalks celery, chopped
1/2 head cabbage, chopped
8 oz can tomato sauce
1/2 cup parsley, chopped (or 2 Tbsp dried)
3/4 cup kasha (buckwheat groats)
6 cups water
2 bay leaves
1/2 tsp unrefined sea salt
1 tsp fresh mint
juice of one lemon (1/4 cup)
(optional) 2 tsp balsamic vinegar
2. Put onion, garlic, and all other ingredients in a large pot.
3. Bring to a boil, then cover and simmer for 45 minutes.
