Jim's Five-Bean Salad

Here's one of Jim's simple, yet tasty naturally vegan recipes to add to your raw diet guide. Using only clean vegan food, Jim's Five-Bean Salad is a crowd pleaser at picnics, dinners, and potlucks. Try this on your next warm evening:

Ingredients

  • 1 15 oz. can Black Beans
  • 1 15 oz. can Kidney Beans
  • 1 15 oz. can Pinto Beans
  • 1 15 oz. can Garbanzo Beans
  • 1 pkg. Frozen Lima Beans
  • 1/2 cup Sweet Onion
  • 1 Red Bell Pepper
  • 1/2 cup Extra Virgin Olive Oil
  • 1/2 cup Organic Apple Cider Vinegar
  • 1 handful Cilantro (chopped)
  • Stevia to taste as a sweetener

Method

  1. Rinse, drain, and combine all beans in a large Tupperware type container with tight fitting lid. In a food processor, with the 'S' blade, pulse onion, pepper and cilantro to desired consistency. Add to beans. Add oil, vinegar and Stevia to desired sweetness and mix well. It is now ready to serve, or cover and refrigerate till ready to serve. Best if eaten within three days. (A can of rinsed, drained corn may be added to the recipe for more color and taste.) ENJOY!
