With most of the U.S. and Canada caught in an arctic freeze, we need a menu stoked with plant based winter meals. I thought this recipe from Melanie might warm the family's tummy on a cold winter evening, especially for those who like something spicy HOT. Remember, on The Hallelujah Diet, cooked food is allowed at the evening meal, following a nice big, raw, vegetable dish, like a salad.

Ingredients
1 cup lentils (uncooked)
1 can (14 oz) coconut milk (or fresh if available)
1 cup distilled water
1 tablespoon green chilies or to taste (chopped fine) (Optional)
1 inch raw ginger or to taste (chopped fine)
1 handful fresh cilantro (chopped)
1 lemon (juice from)
Cayenne pepper (pinch or to taste)
1/4 teaspoon of each of the following: Celtic Sea Salt, coriander, turmeric, ginger powder, cumin, cloves, cinnamon, nutmeg, & paprika.

 

Directions

Place all ingredients in a pot, bring to boil, turn down and simmer on low till lentils are soft (about one hour). Serve with lots of brown or basmati rice and a big salad. So yummy!" ENJOY!
