Ingredients:Cucumbers
Salad greens
Any of the following:
1 - 2 Tbsp celery, chopped fine
1 - 2 Tbsp carrot, grated
2 Tbsp tomato, chopped into small pieces
1 - 2 Tbsp raw almond butter
Directions:
- Wash cucumbers thoroughly and peel
- Cut cucumbers in half lengthwise, carefully remove the seeds
- Chop cucumber hearts together with any of the ingredients listed above
- Place cucumbers on top of a bed of salad greens
- Mix in enough nut butter to hold it together and fill the cucumber halves.
- Note: You may change the “stuffing” by simply adding your favorite veggies or by adding herbs such as 1 Tbsp minced parsley.
