This recipe offers a quick, easy, and healthy option for those busy weeknights. With just a few minutes of preparation, you can toss these ingredients into a crockpot, and let it cook for several hours to create a delicious and satisfying soup perfect for any time of the day. 

Ingredients:

2 cups red lentils
1 stalk celery, chopped
2-3 medium carrots, chopped
1 medium onion, chopped
3 Roma tomatoes or 2 medium tomatoes, chopped
Celtic Sea Salt to taste
Potatoes (optional, see note)

 

Directions:

  1. Rinse lentils and put them in the crock pot with 2.5 cups water. 
  2. Add all the veggies and cook on high for 3-4 hours or on low for 8 hours. 
  3. When all the lentils are a creamy consistency, it is done. 
  4. Add Celtic Sea Salt to taste.
  5. Note: You can also add potatoes if you're at home for the last 2 hours of cooking.
