¼ cup extra virgin olive oil
1 Tbsp Dijon Mustard
2 garlic cloves (peeled and minced)
½ tsp unrefined sea salt
Pinch of cayenne
4 cups of cauliflower (coarsely chopped - separate from other ingredients)
½ cup carrots (shredded)
1 small red bell pepper (seeded and minced)
¼ cup red sweet onion (diced fine)
2 Tbsp fresh parsley (minced)
1 tsp fresh basil leaves (minced)
2. Prepare cauliflower and place in a bowl.
3. Pour prepared marinade over cauliflower and mix well.
4. Cover and refrigerate for 4-6 hours.
5. Add remaining ingredients to cauliflower and marinade for final hour.
6. Drain and serve.
