Ingredients:
4 potatoes
1/4 cup diced celery
1 cup grated carrot
1/4 cup diced sweet red onion
1/4 cup diced sweet red pepper
2 tablespoons raw flax oil (or Udo's oil blend)
1/4 cup organic apple juice
1 teaspoon all purpose herb seasoning
Celtic Sea Salt to taste


Directions:

  1. Boil potatoes until almost soft. 
  2. While boiling the potatoes, prepare the other vegetables. 
  3. When potatoes are done, run cold water into the potato pot until potatoes are cool. Drain.
  4. Cube potatoes into a large mixing bowl, add raw vegetables, oil, and seasonings, mix and refrigerate for at least an hour before serving.
