Ingredients:
4 potatoes
1/4 cup diced celery
1 cup grated carrot
1/4 cup diced sweet red onion
1/4 cup diced sweet red pepper
2 tablespoons raw flax oil (or Udo's oil blend)
1/4 cup organic apple juice
1 teaspoon all purpose herb seasoning
Celtic Sea Salt to taste
Directions:
- Boil potatoes until almost soft.
- While boiling the potatoes, prepare the other vegetables.
- When potatoes are done, run cold water into the potato pot until potatoes are cool. Drain.
- Cube potatoes into a large mixing bowl, add raw vegetables, oil, and seasonings, mix and refrigerate for at least an hour before serving.
