Ingredients
¾ cup teff or sorghum or light buckwheat flour
2 tsp. baking powder
½ tsp baking soda
¼ tsp unrefined salt (optional)
1 tsp cinnamon
3-4 bananas, mashed
¼ cup oil or butter
¼ cup water
2-4 Tbsp. honey/molasses
1 tsp. apple cider vinegar
½ cup ground flax seeds
Opt: ¾ cup chopped nuts such as walnuts or pecans
Opt: ½ cup raisins
Opt: ¼ tsp. cardamom
Directions
2. Mix the remaining ingredients in a bowl, then mix lightly with dry ingredients that were mixed previously
3. After combing all ingredients, pour into an oiled pan and bake at 350 degrees for about 50 minutes
