Crockpot Pilaf

The side dish of all side dishes... especially when you're pressed for time! Let the crockpot do the rice cooking for you. Just add the tasty ingredients and in a few hours, voila! The perfect side dish for a night at home or dinner with friends.

Ingredients

2½ cups vegetable soup stock (or distilled water)
16 oz fresh peeled and chopped tomatoes (or salt free tomato sauce)
1 medium ripe bell pepper (red, yellow, or orange)
1 large garlic clove (or two small), peeled and minced (optional)
1 medium onion, chopped
2/3 cup ripe black olives, sliced
1½ cups uncooked organic Basmati rice
1 tsp all purpose seasoning
1 tsp dried basil
1 tsp dried oregano
½ tsp Celtic Seal Salt or to taste (optional)

Directions

1. Place all ingredients in the crockpot and stir well.
2. Cover and cook on low 6 to 9 hours or on high 3 hours.
3. Serve with your favorite salad and Tomato Basil Flatbread for a hearty meal.
