Ingredients:8 oz dry Great Northern Beans (or other beans of your choice)
2 cans tomato paste (8 oz cans)
2 medium potatoes, diced
2 medium carrots, shredded
2 small onions, diced
4 cups distilled or purified water, or vegetable broth
Directions:
- Wash beans and soak overnight in enough water to cover. Drain beans in morning.
- Put soaked beans in crock pot. Add all other ingredients, stir, and cook on low for 6 hours or until ready to serve (if cooking longer than 6 hours, check periodically to ensure there is enough liquid in the pot).
