Creamy Corn Chowder (Serves 4)
This chowder is an easy blender recipe for minimum effort after a long day. One of the most important ingredients is fresh creamy almond milk and we make our regularly enough that this usually isn't a problem. The warm nuttiness of this milk really complements the other flavors in the chowder.
Fresh Ingredients
Organic, non-GMO foods are always best. We use fresh organic or organic flash-frozen corn kernels and homemade almond milk. If you made creamy almond milk ahead of time, make sure it was within the last week and if not, we recommend whipping up a fresh batch.
I recommend a yellow onion, which is usually best for soups and chowder recipes, but any onion will do. Adding avocado really helps refine the texture of this soup and adds a wonderful source of omega-3s and healthy, beneficial fats to help you feel full. To complete this dish, red pepper blends a touch of sweetness and works well as a garnish for added color.

Make your creamy almond milk ahead of time so you have it ready. Chop or mince red pepper to desired size if you plan on using it as a garnish, then thinly slice avocado needed for topping and set aside. Place all ingredients into your blender and blend well. Pour into four bowls evenly and top with garnish ingredients, if desired. Serve and enjoy!
