Who says you have to give up comfort foods to have a new "you" this year? This creamy cauliflower soup is hearty, tasty, and good for you, too! In fact, one serving of cauliflower has only 15 calories but 40% of your daily vitamin C! Plus, it contains an important, cancer-preventative phytochemical called sulphorafane, which also acts as an internal sunscreen. In fact, the cauliflower plant does some sun-screening of its own, too; that's why it's white. During the growing season, the outer leaves of the cauliflower plant shield the head from sunlight, preventing photosynthesis, which would otherwise turn the head green.
Ingredients
1 large cauliflower, cut into florets
2 large carrots, quartered
2 celery ribs, cut in 2-inch pieces
1 cup pine nuts, soaked 1 hour and drained
1 garlic clove, peeled
2 tsp dill weed
2 Tbsp extra virgin olive oil
2 tsp unrefined sea salt (optional)
4 green onions or handful of chives for garnish
