Berries are a fabulous food choice. They are full of vitamins, minerals and disease fighting compounds. They do not have to be fresh to be healthy. They can be kept in the freezer and thawed out as needed. Every morning, you could take out a half cup of berries from the freezer, sit them on the counter top and within an hour or less, they are ready to be enjoyed.

Tangerine Walnut Cream
Makes around 1 cup
Blend the following in a high-powered blender:
1 ½ cups walnuts (preferably soaked overnight and drained)
½ cup freshly juiced tangerine juice
1 Tbsp. fresh lemon juice
1 Tbsp. maple syrup
A sprinkle of unrefined salt
Add a couple tablespoons of water if needed for desired consistency.
Directions:
1. Place desired amount of blueberries in a bowl. (Maybe around ½ cup.)
2. Stir in desired amount of Tangerine Walnut Cream. (Maybe around 3 tablespoons.)
