Beets
Carrots
Summer squash
Zucchini
Red cabbage
Tomato slices
Corn off the cob
Sliced radishes
Directions
Grate beets, carrots, summer squash, zucchini, and cabbage. Arrange in concentric rings on a plate or platter. Arrange sliced radishes and tomatoes decoratively in the center or around border, and then sprinkle with corn kernels. Individuals can serve onto beds of lettuce and drizzle with dressing. A nice alternative to the usual green salad! ENJOY!
