Our Holiday Sweet Potato Casserole is one of our favorite tasty plant based meals for holiday festivities. Add this to your list of vegan dinner party ideas; it's hearty, healthy, and delicious. The following affordable vegan recipe is found on page 128 of Hallelujah Holiday Recipes by Rhonda Malkmus:

Ingredients
3 or 4 Sweet Potatoes (or enough to make 3 cups)
1 teaspoon Vanilla Extract
1/2 cup Rice Milk (or Almond Milk)
Pure Maple Syrup to taste

 

Directions
  1. Bake sweet potatoes, cool, peel, and mash.
  2. Mix in the remaining ingredients and place in a 1½-quart casserole dish.

TOPPING:


Ingredients
1 cup Pure Maple Syrup
1/3 cup Whole-wheat pastry flour
1 cup Pecans (chopped)


Directions

  1. Combine topping ingredients and spread over sweet potatoes in casserole dish.
  2. Bake 20 minutes at 300 degrees.
  3. ENJOY!
