Ingredients
Pizza Dough
1 Tbsp. Active dry yeast
2 Tbsp. honey
1 1/4 cup very warm distilled water
1 1/2 cup whole wheat pastry flour
1 1/2 cup unbleached white flour
corn meal
Directions
Mix honey into distilled water, heat until honey is dissolved and the water is warm to the touch but not boiling. Add dry yeast and mix until dissolved. Let rest 5-10 minutes. Bubbles should form on the surface. Gradually add flour and knead about 10 minutes. Dough may be sticky - if so, use a small amount of flour on hands. After kneading, cover and put in a warm place to rise for approximately 1 to 1 1/2 hours. Roll out until 1/4 inch thick, place on pizza pan, sprinkle with corn meal. Allow dough to rise for about 1/2 hour. Add toppings and back at 350 degrees for twenty minutes.
Pizza Sauce
Ingredients
2 garlic cloves
1 cup tomato paste
1 Tbsp. lemon juice
1/2 tsp. oregano
1 onion
2 cups tomato sauce
1 tsp. raw, unfiltered honey
1/2 tsp. basil
Directions
Mince garlic, chop onions fine. To use for a raw pizza, add the remaining ingredients and allow to sit until flavors are blended.
To use for cooked pizza, place onions and garlic in a pan with a small amount of water to steam until tender. Add the remainder of the ingredients and cook until it has reached the desired consistency. Spread on pizza crust and top with your favorite veggies.
Vegetarian Pizza
Ingredients
1 prepared crust from Pizza Dough recipe above
2 cups pizza sauce from above
1 1/2 cups tomato paste
1 cup grated almond or other vegetarian cheese
1 tsp Italian Seasoning
3 cups vegetables such as: diced bell pepper, grated onion, grated zucchini, yellow squash, mushrooms, etc.
Directions
Preheat oven to 375 degrees. Combine pizza sauce, tomato paste and Italian seasoning and simmer on low for about 20 minutes to blend flavors. Spread onto the crust recipe from above. Lay down a thick layer of vegetables and top with grated almond cheese. Bake 20 minutes.
