Ingredients
4 cups day-old (dry, stiff) bread cut into 1" cubes (a baguette works well)
¼ cup Vegenaise
Garlic powder
Ground pepper
Unrefined salt
Oil spray
Directions
2. Layer in a casserole dish.
3. Sprinkle with garlic powder, salt, and pepper.
4. Cut second tomato in thin slices and layer on top. Sprinkle with garlic powder, salt and pepper.
5. Repeat this process with the third and fourth tomatoes.
6. Spread Vegenaise over top layer.
7. Place bread cubes in a bowl.
8. Spray bread with oil. (You can use your own oil mister or a can of grape seed oil.) Toss. Spray again. Toss, making sure all cubes have some oil.
9. Spread bread crumbs overtop tomatoes. Spray oil liberally again across bread cubes.
10. Bake at 350 degrees for 30 minutes.
11. Option: Sprinkle fresh or dried oregano or basil in-between layers.
