Savor the delightful taste of date pecan squares with this healthy treat. A deep rich, flavor the whole family will love!
Ingredients:2 cups pitted dates
1/2 cup pecans
1 1/2 cup dried coconut
1 teaspoon vanilla extract
Variations: Try a raisin/almond mix, or try some figs and sunflower seeds.
Directions:
- Run dates and pecans through a food processor, or mince by hand.
- Work in vanilla.
- Sprinkle half of the coconut on a plate.
- Place date/pecan mixture on the coconut and tamp down well, so that the coconut is absorbed into the date/pecan mix.
- Sprinkle the remaining coconut on top and tamp again.
- Cut into squares and wrap in waxed paper and store in a container in the refrigerator.
Makes 8-12 squares.
