Next time you want to give raw cauliflower some excitement, toss together these ingredients, and you’ll have a dish that lives up to its name . . . terrific.
2/3 cup chopped cauliflower
3 Tbsp. chopped onion
1/3 cup chopped celery
1 Tbsp. extra virgin olive oil
Pinch unrefined salt or to taste
½ tsp. Italian seasoning
Juice from ¼ lemon, seeds removed
2. Squeeze lemon wedge over ingredients.
3. Stir to integrate.
4. This combo tastes great immediately and even better when marinated overnight.
5. Optional: A sprinkle of black pepper.
6. And, of course, add more or less of any ingredient to suit your personal preferences.
