Tahini Crunch Bar

No sense in adding sugar, honey, maple syrup or any additional natural sweeteners as this candy-like crunch bar is fantastic as is! “Less is Enough” is a way of saying that less sugar, even from natural sources, is usually enough. Keep a batch on hand to use as an extraordinary crave buster. This recipe can be found in the book, "Less Is Enough" by Melody Hord

Ingredients

1 cup virgin coconut oil
5 Tbsp. Hallelujah Diet Raw Carob Powder
1 cup almond butter
1 cup tahini
Pinch of salt if desired
1 to 2 cups unsweetened coconut shreds.*
Enough coconut oil to grease an 8 ½ x 8 ½ baking dish

Directions

1. Stir together first 4 ingredients in a large bowl. It is Ok to leave little clumps of the "nut and seed butters". (For a consistent texture, or if you don't like to stir, use a food processor if desired.)
2. After first four ingredients are integrated, add coconut shreds and stir into mixture. One cup of shreds is sufficient, but it you like it extra crunchy, 2 cups is good, too. (If using a food processor, pour mixture in a bowl before adding coconut shreds.)
3. Pour into the greased baking dish.
4. Cover and refrigerate until hard. (a couple hours)
5. Cut into squares or rectangles. Must keep refrigerated or it will melt.
Note: *We used the brand "Let's Do Organic", unsweetened shredded coconut, Ingredients are: Organic coconut (shredded and dehydrated).
