THE PASTA – In a bowl, place the following ingredients:
2 large Zucchini (peeled & course grated or sliced in a food processor)
1/2 cup chopped mushrooms (use your favorite)
6 Italian Olives (pitted and halved)
THE SAUCE – In a blender, place the following ingredients:
2 cloves Garlic
2 vine ripened Tomatoes
1/2 cup Sun Dried Tomatoes
2 tablespoons Extra Virgin Olive Oil
1/4 cup fresh Basil
1/4 cup fresh Oregano
1 teaspoon Celtic Sea Salt (Or to taste)
Blend well and pour THE SAUCE over THE PASTA (Zucchini) ENJOY!
