Ingredients:
5 medium sized Potatoes
2 tablespoons Extra-Virgin Olive Oil
1 large Garlic Clove
Directions:
Roast the garlic in a small covered ovenproof container with the olive oil for approximately 1 hour at 350 degrees. Peel and crush the roasted garlic. Cook the potatoes, mash, and add the crushed, roasted garlic and olive oil. The 'roasting' takes the odor out of the garlic and adds flavor to the olive oil. This way is so much yummier than with butter and milk, which we all KNOW is a NO NO! ENJOY!
