Ingredients:
1/4 cup extra virgin olive oil
Corn tortilla
Vegetarian Refried Beans
Salsa (or chopped tomato, onions and jalapeno)
Cilantro
Avocado
Directions:
Heat extra virgin olive oil in a skillet. Put in a corn torilla and turn when lightly browned to cook both sides. Drain on a paper towel. Spread vegetarian re fried beans (or beans you have cooked and mashed yourself) on the top. Add salsa (or chopped tomato, onions, jalapeno), cilantro and avocado. Muy Bueno!
Suggestion for preparing Tostada:
Place corn tortillas on a cookie sheet in the oven until crisp. It contains enough fat to crisp without adding oil. Be prepared to see some fat released from that little tortilla in the process!
