How can vegan clean eating include cheese on the menu? Janice's Jack Cheese is made from sunflower seeds, which are linked to lower rates of cardiovascular disease, high cholesterol, and high blood pressure. Typical cow cheese has the opposite effect, raising risk of disease and sickness. So, Janice's Jack Cheese is healthy AND delicious - making it one of our top plant based recipes! Add this to any vegan meal or enjoy as a snack.
Janice sent us this recipe with this note, "Hi George, This fabulous recipe is a cheese substitute, and can be used as a sandwich spread, a topping for baked vegetables, used on crackers, a dip for kids with a platter of bite sized veggie pieces, and the list goes on. I put it in my kid's lunch boxes sometimes. Hope you find it very useful."
1 1/2 cup sunflower seeds
1 teaspoon Celtic Sea salt (to taste)
3 tablespoons grated carrot
2 cloves garlic
1/2 cup corn flour
2 cups hot distilled water
2 teaspoons onion powder
1/4 cup yeast flakes
1/2 cup lemon juice
Blend all ingredients until satiny smooth. Heat in a large pot, stirring constantly until thick. Put into a flat container and chill in the fridge. (Use as a butter or cheese replacement. Very yummy on jacket potatoes and roasted vegetables.) ENJOY!
