Another great recipe from Everyday Wholesome Eating by Kim Wilson. This great dish can be a star player in your themed night when you want enjoy the flavors of Italy.
Ingredients
3 onions, sliced
1 cup lentils
¾ cup brown rice
5 cups water
1 tsp. basil
1 tsp. oregano
1 tsp. thyme
1 tsp. garlic powder or granulated garlic powder
1 tsp. onion powder (optional)
1 chopped tomato
Unrefined salt to taste
Directions
2. Add lentils, rice, water and seasonings (except salt).
3. Bring to a boil, then cover and simmer for about 35 minutes to 2 hours, (until desired tenderness). Stir on occasion to prevent from cooking onto the bottom of the pot.
4. Remove cover near end of cooking to cook off any excess water.
5. Stir in salt when done.
